Guacomole for Cinco de Mayo!

Recipe for Guacomole
Ingredients:
2 Avocados, halved, peeled, diced and pitted
2 teaspoons Freshly squeezed lime juice
2 teaspoons Jalapeno pepper, seeded and finely minced
1 Tablespoon Fresh cilantro, finely chopped
2 teaspoons Fresh oregano, finely chopped
1/4 teaspoon or to taste Sea salt or fine kosher salt
1/8 teaspoon Freshly ground black pepper
1/4 cup diced, seeded, ripe tomatoes
Procedure:
Coarsely mash avocado by placing the cut avocado in a medium side bowl and lightly mash with fork. Add the lime juice and toss. Fold in the remaining ingredients. Serve with tortilla chips, cucumbers or cut sweet bell peppers.
Yield: 1 heaping cup

I love guacamole. I'm fortunate to live next door to friends with a large tree. They've giving me about eight avocados a week.

When life gives you avocados, make guacamole. Or something like that.

I do it the cheap and easy way ... I just take fresh salsa and put it in the mashed up avocado. But if I were having people over, this is a great, simple recipe.
